PROPER SERVICE METHODS

Defined as: The use of all our service methods in order to give excellent service to our members.

Wine Service

Do not reach across the member. Keep your body open to the member. Table Presence Always mention each item as you serve the member.

Always open bottle in front of members with the label facing them at all times. Always present wine to the host for their approval. Always allow the host to taste the wine.

Always handle wines carefully.

Women served first, keeping body open to the member.

Always inform members of any service delays

Courses are cleared quickly and silverware replaced before the next course arrives. Offer or ask for assistance in order to maintain the expected level of service. Always do a two-minute check after serving each course to ask about satisfaction.

Are always attentive and anticipate the members' needs, so they never have to ask for service of any type. Always remove dirty glasses and dishes and other used items promptly. Always clear each course within three minutes after ALL members are finished.

Provide constant refills of water, wine, coffee, tea, etc.

Always present check in a timely fashion (read your tables) and thank them for dining with us.
