STEPS OF SERVICE OUTLINE
Upselling Dessert
-Always offer dessert at dinner service/at the end of entrees.
Either by dropping off menus or verbally asking. Have menus in hand before asking
-Remember to offer after-dinner drinks (Port Wines, Scotch, etc.)
Take the order, deliver coffee/tea right away. Ask if they would like cream and sugar (coffee) Honey and lemon come automatic (tea)
Present tea box if guest does not request a specific tea Pre-heat cups for hot beverages.
Final Clearing
-Remove all unnecessary plates, flatware, crumbs or any other unsightly things
Exit
“Thank you for joining us (today, this evening, morning, afternoon) “Thank you for joining us Mr. and Mrs.___, (or specifically Ladies/Gentleman/Everyone) We look forward to next time or Have a great week/weekend!” -Present the ticket and THANK USING THE MEMBER NAME
