counter-style breakfast in the mornings is also a great cost saving for the club. We will add bagel sandwiches to the weekends. Peaks Café & Bagel Shop Highlands Grill Double Scoop Ice Cream Shoppe 8:00am – 3:00pm The changes will made to the pool area worked out well this past season. We will continue with our grill on the weekends and the new bar was a tremendous revenue generator. ● This is still a great multi-functional area that caters to many F&B members’ needs. ● It is the one area you can get coffee, smoothies, or pastries in the AM. It is our mini-Starbucks on property and now on weekends we will offer Fresh Bagels and Pastries. ● During the day, it functions as the pool snackbar where families get lunch, refreshments, and ice cream. ● During the week it will now be counter style service and full service on the weekends. ● In the evening, it turns into an Ice Cream shoppe. Members can stop here after dinner or during an evening stroll to enjoy some of our high-quality Ice Cream. ● Lastly, this will now be our Bagel shop on weekends. We want to best utilize this special area this summer. There is a lot of activity taking place and we want members to recognize this as another great F&B outlet. The Peaks Café will remain the same with a few menu modifications. The big change will be the addition of the Bagel and pastries on the weekends. The Highlands Grill will be counter service Monday – Thursday and Full Service on the weekends with the Grill operation on the Pook Deck. The Bar will remain operational 7 days a week for pool patrons. The Ice Cream shop will continue to operate throughout the day and in the evenings on the weekends. 2024 LABOR PLANS: Labor as a percentage of Revenue has grown over the last 5 years. A big part of this can be tied to COVID and labor shortages in the hospitality industry. ● Young enterprising seasonal staff are no longer readily available. Jobs in the stressful and challenging hospitality field are no longer as desired by college and high school youth. Attracting this group now requires higher wages, fewer long shifts and a stress-free work environment. ● At the same time, the club has grown in memberships and dues have increased. The demand for high quality food and service has correspondingly grown as well, so not only have wages had to increase but labor levels have also had to increase. Though members and the public in general had a new respect for hospitality staff after COVID, service expectations have remained high, particularly in the luxury service sector. The increased price of dining out has also led to a higher expectation of quality service. ● Forest Highlands is also a seasonal operation which limits our ability to attract skilled and experienced staff for full-time employment. Any skilled college students have limited availability and
